A typical Kashmiri spice blend consists of spices such as Kashmiri red chillies, cumin, black peppercorns, bay leaves, cinnamon, fennel seed, cardamom, mace, and cloves. Mamaji’s adds a few more ingredients namely, ginger, cashew nuts, tomatoes, and lemon juice. The ingredients are toasted until their fragrances surface and then blended together. The paste is then mixed with water, and coconut milk before being introduced with Mamaji’s Special Masala. The result of this mixture is our fan favourite Kashmiri Masala.

Best Used For

Mamaji’s Kashmiri Masala goes well with all kinds of meats. Use it with lamb, steak, pork, fish, shrimp, and chicken as a marinade mix. Apply the paste over the meats before grilling them or use it as a dip for barbequed meats. Use the masala to stir fry vegetables such as cauliflowers, potatoes, zucchini/courgettes, asparagus, eggplants, baby corn, green beans, and okra. Use it to make a delicious gravy for your breads, rotis, naans, parottas, and more. Mix the paste in water and make a spicy broth for your noodles. Make gravies for steamed basmati rice, pulao, and biryanis.

    Mamaji’s careful selection of spices, including Kashmiri red chillies, cumin, and ginger, deserves a big applause. It also has cashew nuts, tomatoes, lemon juice, and other ingredients; I’m searching for them. But overall, it is a beautiful product. If you love hot Indian curries but don’t want to go with too-spicy flavors, then this is a go-to item.

    What sets Mamaji apart is not just the taste but its quality. Gluten-free, and free from additives, artificial colours, and MSG, it is both authentic and wholesome. The quantity is also quite good. I’m using this as a marinade for meat and fish. And also, the jar is beautiful; you can reuse it for a shelf.
